POMARIO OLIVE OIL – From the “LAND OF OLIVE OIL GUIDE 2014”
The Pomario farm belongs to the Spalletti Trivelli Counts. This family has a long wine-growing tradition and its farm is a wellness area between the Colli orvietani and the Trasimeno. It follows the dictates of biodynamic organic farming so as to not alter the ecosystem’s balance.
Impenetrable green leaf. Its initial notes are the fruity ones of green apple and unripe banana, with a return of cardoon. It has an immediate sensation of artichoke and a persistant note of Indian Achar hot pepper. Its finish is very persistent and aromatic. This oil is still fragrant.
There is no doubt that this oil will be used to enhance regional dishes such as wild boar stew with carrots and roasted potatoes. Excellent on Spaghetti alla Nursina.
