Originally there was only one hectare of vineyard located in the highest part of the property and consisted of old varieties of Sangiovese, Trebbiano and Malvasia. The old Vineyard was registered in 1972 but from the age of some plants it can be traced back to the 60’s. The biodiversity present in the old vineyard was very important and, in the first years of operation, Susanna and Giangiacomo Spalletti Trivelli have pledged to recover all the plants by vigorous pruning and careful restoration. In 2009 the tests of vinification started. These tests confirmed the potential of these varieties that after over 50 years were fully integrated with the environment. The deficiencies of the vineyard were covered with clones of the old vines. Contemporarily two more acres were planted with the same varieties. Today, three hectares of vineyard are totally cultivated with Sangiovese, Trebbiano and Malvasia with the addition of 3000 square meters of a clone of Bordeaux Merlot.
In 2010, another 8000 square meters were prepared using the terracing method and Sauvignon and Riesling were planted for the production of a dessert wine called “Muffato”
The vineyard and the later stages of vinification are carried out with organic methods.
The natural terracing that from the top of the hill slopes down to the woods are the ideal habitat for the olive groves that are still numerous and perfectly healthy, despite the secular age. It has been sufficient to add a few new plants and reposition some of the old ones that were completely integrated with the wood to obtain a healthy and productive Olive Grove. The main varieties are those of classic Umbria oil with a predominance of Frantoio and Moraiolo (70%), Leccino (25%) and various Pollinators.
Cultivation techniques are traditional in accordance with the dictates of Organic Agriculture: farming with a pot, grass and localized organic fertilization. The collection, very early, is manual with only the help of soft facilitators. The olives are cold pressed directly in the farm within the first 3 hours from the collection. The oil at the sight appears of a nice emerald green. To the nose it presents rich fruity notes and to the taste is well-balanced with strong fresh grass tones. Intensely Bitter and Spicy, but in an harmonic way, leaves a spicy aftertaste with a flavour of fresh olive.
